The logical choice was Quebec: a region of Canada thick with French heritage and filled with family-run artisan farms. Rougie shipped over from France not only the best breeds of fine foie gras duck – moulard – but also their artisan methods, perfected over the course of hundreds of years. The ducks are pampered and fed Quebec corn, without any hormones or antibiotics, and carefully and slowly fattened to perfection.
