What is Extra Virgin Olive Oil

There is nothing more simple: extra virgin olive oil is simply the juice of pressed olives. Unlike other “refined” oils, like canola, extra virgin olive oil does not undergo any industrial process, just mechanical pressing. Extra virgin olive oil is the highest grade of olive oil available, in its most pure form.

To be called extra virgin, olive oil must also meet certain qualifications of acidity and taste. Extra virgin olive oil must contain no more than 0.8% acidity.

What is the difference between virgin and extra virgin olive oil?

Sometimes when making extra virgin olive oil, the results are less than perfect, and the oil has some “defects”. That oil is categorized simply as virgin olive oil. It still has a very pure olive flavor.
