Mahon Cheese

Hailing from the sunny Balearic Island of Menorca, Mahon is a mellow cow’s milk cheese from Spain, typically aged from anywhere from two months to over a year. It starts buttery and tangy, and develops a more complex, salted caramel profile as it ages. About Mahon Cheese

Mahon cheese is one of Spain’s most prized culinary items, but one often overlooked for another more famous Spanish cheese, Manchego. Manchego cheese comes from sheep’s milk, while Mahon is made with cow’s milk. Unlike Manchego, which is rubbed with olive oil, Mahon is rubbed with butter, oil and paprika, the latter giving the cheese an orange hue that characterizes it. The aging can vary, anywhere from a young two months to well over a year.

As with any cheese, the more the cheese is aged, the more the flavor develops over time. A young Mahon cheese will be mild, smooth, and dense, becoming more intensely flavored with time, drier and crumblier.
