The Good Fats in Foie Gras

Foie gras is delicious and decadent...and yes, incredibly rich and full of delicious fat (foie gras, after all, means “fat liver”), but never fear, this luxurious treat is good for you, when eaten in moderation. The secret is that although foie gras is high in calories, it's still healthy. Much like a huge amount of chocolate is not good for you, and large amounts of foie gras will have you looking and feeling like a fat duck in no time, a small, moderate portion is actually good for you. The key to foie gras nutrition is that the fats that make up the liver are good fats, mono-saturated and poly-unsaturated fats. They act on the body by lowering the levels of bad cholesterol and raising the good cholesterol levels in the body.

 

Eat like The French!

The French have created some of the richest, most calorie-laden foods in the world. Butter, triple cream cheeses, sausages, tarts, foie gras, the list goes on and on. One would logically think that they must be a fat, unhealthy nation, but au contraire, mon ami! France has one of the highest life expectancies in the world, and moreover, research shows that people living in the south of France (foie gras country, if you will) have the longest life-expectancy rates in France!

 

Foie Gras In Your Diet

As always, keep in mind that a diet needs to be balanced, and that calories in foie gras do add up. So indulge in your bloc, mousse or lobe of foie gras, paying attention to quantities and portions, so as to not overdo it with the foie gras calories, pair it with a glass of antioxidant-rich French wine, and enjoy!

@ALAN TAYLOR 1 oz is typically considered 28 grams. That's what us countries still using the stupid imperial units get.

Why would you mix units by talking about a 2oz serving and then how much fat in grams??
