The quest to find the perfect marriage of foie gras and wine is endless; connoisseurs and amateurs alike will give you thousands of different recommendations, suggestions, and directions. The best advice I ever got from a fellow foie gras lover was this: Ignore all formulas. Buy a few different types of wines that you like and love, and sit down with a good dish of foie gras to find out which one works best for you.

For all those other occasions, here's a good cheat sheet:

The Classic

  • Foie Gras and Chardonnay. For seared or other rich foie gras dishes, pair with a Chardonnay.

The Utterly Luxurious

  • Foie Gras and Champagne. You really can't go wrong with it, especially for a meal that features foie gras as an entrée rather than an appetizer.

Wine in Doubt

Ask yourself these questions before selecting a wine to pair with your foie gras.

  • What is going to be served next? Certain wines might work well with foie gras alone, but not with the rest of the meal.
  • What type of foie gras dish are you serving? Foie gras can be served in a variety of ways: pâtés, terrines, seared, broiled…well, you get the picture. They're all different, and may not go with the same type of wine.
