What is Grana Padano?

Like so many of our favorite cheeses, beers, and breads, Grana Padano was first created in a monastery. Thanks to the creative genius of the Cistercian monks of the Chiaravalle Abbey, this iconic Italian cheese was born. Produced from the milk of free-range Italian cows grazing on the polders of the Northern Italian countryside; the cheese boasts a singularly delightful flavor profile thanks to this localized diet. Aged for a minimum of nine months to achieve its characteristic robust flavor and flaky texture.

An example of artisan cheesemaking at its finest, this finicky cheese can easily go awry and takes a level of skill and craftsmanship unrivaled by most dairy products. Production begins in the typical way, combining fresh milk with rennet and heat in large copper cauldrons. Once the curd is separated and molded into large wheels, it is salted for two weeks, then aged for no less than nine months. Inspected at the end of its gestation period, if it passes its color, scent, and texture test, it is finally given its fiery seal and sent out to you, the discerning gourmand.
